You want to cook it at about 120/130DegC until the temp inside gets to 90DegC You don't get crispy crackling this way but the pork just pulls apart. The pork itself is cooked once it hits 70DegC
I still haven't mastered it but have a looky over here for ideas. If you can't wait for "low and slow" try searching for Turbo Butts (pork shoulder = pork butt = boston butt to the Yanks)Comment
