There are cattle which are good milkers (Friesian, Holstein) and there are cattle which are good for beef (Aberdeen Angus, Hereford, Devon Red).
Dairy cattle do not generally produce good beef. (And beef cattle have low milk yields)
A townie that lived and worked on farms for most of the first 20 odd years of his life...
Anyway I suppose your farmer friend doesn't actually have several fields full of aging bulls that he can't bear to part with. Where do you suppose they went? And you do realise that most of the meat in the food chain comes from animals less than 9 months old? The quality stuff comes from cattle bred for beef, as you say, but the bulk is from dairy stock. Which is really where we came in, I believe.
