When I've taken private cars and bikes for a test ride, I've always just handed over the keys to whatever I'm in before I go.
Some people have asked for cash upfront before a test ride, and I walk away at that point.

For the car, then you ride along with them.
For the bike, offer a test ride if you are comfortable that the buyer is genuine and ask to hold their ID and keys while they do it.
