Potassium Nitrate (saltpetre) is used as a food preservative, mainly to avoid botulism, particularly in the curing process. It's not needed as long as you are careful with your pork by draining it each day and leaving it in the fridge.

I use some aromatics with my cure - rosemary, thyme, dark muscavado sugar and star anise.

You'll never go back to real bacon!

Ah, thats the difference. The recipes I was looking at used air drying for a week or so after the initial cure (hang it in muslin in the garage or somewhere else cool and dry.)
