          Potassium Nitrate (saltpetre) is used as a food preservative, mainly to avoid botulism, particularly in the curing process. It's not needed as long as you are careful with your pork by draining it each day and leaving it in the fridge.

          I use some aromatics with my cure - rosemary, thyme, dark muscavado sugar and star anise.

          You'll never go back to real bacon!

              There aren't any cattle in the field the other way at the moment; there were last time I was here. Do they stay in during the winter or something?

              They were beef cattle, not dairy.

                A lot of those locations are in the desert, but carefully framed so you can't see the houses right behind the camera.
