If I was offered a contract that had an issue with me working a one month notice period, I'd not want that contract as they clearly haven't planned/managed their situation well enough, and are at a crisis. But if they are at a crisis, I'd be asking them for 2x the going rate to get them out of it, and would then negotiate with current people to leave sooner.
Everything is negotiable, if you have the right attitude.
If you're an arrogant ignoramus, then you might find some things aren't negotiable.
