what software to use?

Audacity should do it.

Had to do a bit of Googlery there, I usually use a slightly less than legal version of Cubase but that would be overkill for this.

I think the DRM may be the only thing that screws that up. If they're DRM free then you should be able to.

The iTunes Music Store went DRM-free a while ago
