We are having turkey stuffed peppers

Got some turkey mince that we need to use so going with :
Ingredients

2 red peppers
150g Quorn mince - but we are using turkey mince.
1 red onion, finely diced
2 garlic cloves, crushed
1 tbsp chopped fresh thyme
2 tsps paprika
1 x 400g can tomatoes
1 tsp vegetable stock powder
a few fresh basil leaves
50g low Fat Mature Cheese, grated
freshly ground black pepper

I am actually going to take a couple of days off.
hand hurts like hell and is giving me what feels like electric shocks as the disturbed nerve fires off.
