      I buy a load from one of the markets in town and freeze them. The freezing seems to mellow them out a little.

            Not yet - the contract is sitting on the printer waiting for me to sign so I can return to ex-clientco. However hopeful direct-client is letting me know today whether I have a sniff.

            If its a fat no then I will be packing my bags and heading back tomorrow morning

                    Hmm, might try that. they have a great flavour. I used them to make the Thai stock, but kept it whole and just pierced it here and there to let the flavour out.

                      I hated that when I was heading over and back to London every week, hated the traipsing to airports every week. Didn't mind so much when it was KLM, when I swtiched to sleazy jet that was a mare!
