Are you suggesting the citizens of CUK cannot sort this out?

Maybe the OP should post everything. I am sure given a couple of hundred posts the right answer will be there somewhere....

You might want to think about that last line again.. Try applying some real world scenarios and some common sense.. Imagine you are the client and someone else turns up with a pin stripe lawyer...what would happen next?
In fact, I advocated the same thing (after getting legal advice) - based on the information given so far, and because I've held management positions. Also, dare I say, I think the range of your experience as a contractor is rather narrower than mine.

So you didn't advocate the same thing at all :

I wasn't suggesting he get legal advice from a plumber....

                IMHO :
                1. Agree to delete the files
                2. Apologise profusely explaining your motives

I'd only speak to a solicitor if that doesn't work.

Wrong. Say the wrong thing to the client and you could find yourself in even hotter water.

                    data breach

Normally in these instances of alleged data theft you can deal with it my agreeing to the requests in their letter. I assume they have sent you a letter putting you on notice of a claim or a cease and desist type letter. If it is the latter then it will probably just ask you to delete files and any copies / backups and warrant this personally and on behalf of the company.

As others have said, get legal advice and make sure you don't use any of the IP.

We have seen the insinuations drawn here based on a few posts.
