I took my own advice and bought a NUC Skull Canyon. Core i7/32GB/x2500GB m.2 sticks in RAID1. Boots in 6 seconds and driving my 28in iiyama 4k monitor at full res over HDMI.

Recommended.

I run esx on a couple of the i5 intense pc 2 models. Really well built. Not cheap though.

Looked at NUC but again the graphics options seem limited to the onboard Intel integrated graphics which aren't much cop for anything other than powerpoint as far as I can tell.

I don't think NCU supports core i7, but the GPU in the latest generations of i7 (skylake kaby lake) pack a punch, usable even for 3D gaming, 4K video is definitely supported I believe even on dual 4K screens

The i5 built-in GPUs are a bit lower spec but still decent

Part of the problem is that I'm way out of date on PC graphics hardware, so no real idea where to start with speccing that. CPU ram HDD etc are no problem.

I'm much the same - just whack in the most expensive one you can find and it must be good enough
