We got pretty lucky to be honest - it's a new boutique hotel and we stayed last year, they emailed me before Christmas with a deal and we booked it then. I have a little obsession (the dog may say it's a big obsession, though) - I love finding boutique hotels... and there is a website (they have books too!) called Mr & Mrs Smith and they specialise in boutique hotels only - I aim to do my best to work our way through as many as possible
