Having been too lazy to get to the kitchen earlier, dinner is being cooked in a two-part process: first in the InstantPot™ (aka fancy pressure cooker) to replace the couple of hours simmering in a low oven that should have occurred, and after that, into the casserole for a further hour in the actual cooker
This is because I want to line the top of the casserole with a layer of sliced potatoes, which are cooked by the juices, then browned as the liquid reduces with the lid off in the final half hour or so in the oven.
Would have been easier just to start earlier and do it all in the oven, but here we areComment
