Chicken casserole just started.
The only reason I make chicken casserole so often (almost every week) is that the big Sainsbury's butcher's counter keeps putting out trays of eight chicken thighs on special offer - usually £4. I much prefer the brown meat off chicken, and I can get three or four meals out of them, meaning I save the trouble of cooking on other days.
They stopped doing them for a few months, and I think I only made chicken casserole twice during that timeComment

I prefer to buy organic, I know it's more expensive, but at least I know I'm getting summat that has had a reasonable life and was fed well.
I prefer chicken thighs to breasts, as the breasts can often dry out too easily.
Need to make more stock, and in doing so empty the freezer of carcasses.Comment

Would probably suit us both if I take a month off with maybe a day or two of support as required.Comment
