I did it some years back and the results were awful. Smelt like feet. Tasting like tulipe.Originally posted by d000hg View PostDidn't know you were into wine-making as well as brewing SY - done it before?
I did it again last year after our fruit picking. The results are as follows :
Strawberry wine - nice enough, like a rose, needs to be chilled. Very strong, and has a kind of warming sensation as it slips down so possibly more of a desert wine or candidate for turning into strawberrry brandy.
Blackberry wine - nice to drink, nothing to rave about though.
Blackcurrant wine - Smooth, classy, could easily have been shop bought. Friends rave about it and I have back orders.
Elderberry wine - Best not talk about that one.
So I have learned a few lessons about different fruits and their characteristics, the importance of pectinase (an enzyme to remove pectin) and acidity. Also learned a bit about tannins.
Make no mistake, wine making is an art and the blackcurrant wine could have been luck. We will find out!

I like the sound of the strawberry one, though obviously you'd never get into distillation
