    Simple cooking tips that work

    I was wondering if you have any.

    I only ask, I was told yesterday by the chef at my gig, that if you use sparkling water, when making porridge, it makes it lighter. So I tried it today, 4 parts sparkling water to 1 part milk, and it was actually delightful, such a simple change to actually make a big change to a simple meal.

    Adding cocoa powder to chilli was another I was told a while back, which also works wonders.

    Any others?

    my nan had one that I use now and then.

    if the food is going to be late, or if the tribe is getting anti, stick half an onion in a bit of oil and fry it.
    smells fantastic and lets people know that something is happening


    an asian lady colleague at a previous contract told me this one. get your lamb chops and rub a piece of garlic in vigorously, leave in the fridge overnight, then cook em.

      Try frying chicken coated in mayonnaise (low fat of course) with no oil, it's lovely!!

        I've been told that most amateur/inexperienced cooks use too much oil and not enough heat (especially when frying).

        I remembered this when making my last batch of pancakes and discovered they were right.

          yep!

          Pan must always be hot but not too much or you will end up with instantly burnt pancakes, heat the pan up slowly.

            I tried no oil, slight oil, and more oil on the kids pancakes last weekend and by far the most popular were the ones with slight oil.

            Reading between the lines, I have seen cooks say to wait until the oil just starts smoking a bt before using it.

            But then I watched an italian cook on a cookery show and they were bathing fried peppers in oil. I guess it's per recipe.

            Stir fry's have to be done really high heat. We have a cast one, and heat it up for 10 mins before putting the oil in.

                  I find wondering into the kitchen and giving the wife a hard smack on the bottom before asking what's for dinner and sitting down at the table expectantly a fantastic way to experience spaghetti ala lap.
