      Lamb FFS Lamb? Mutton man, mutton. Cook it for hours. I like goat too, same applies for cooking.
      Lamb is far too delicate a meat for a curry.

          Very true, but as you said, mutton cooked slowly for a good number of hours or goat is exceptional.

          I love fish curried right, in fact had that last night a a Thai place, really nice.

          I do not like very hot curries as the heat should be a complementary flavour not obliterate the other tastes.

              Curry doesn't have to be overpowering, it can be subtle and delicate... just complex.

                Chicken or mutton... but it MUST be on the bone.

                UK indian restaurants always seem to use chicken breast which is generally tasteless and chewy

                As for using mutton - slow cook it, the marrow in the bone is gorgeous (if rather heart attack friendly)

                Crab is suprisingly good when curried properly too, seems to favour a drier curry
                Coffee's for closers

                  Mutton. On the bone. Slowly cooked. Exotic spices.

                  I avoid chicken in run-of-the-mill takeaways as it's generally rubbery, often has a sauce poured over it and twice so far, has given me food poisoning. Lamb, to date, hasn't.
