Cloud. The data centers are in Ireland. It's as secure as any other cloud service, I suppose... until it isn't. You will get notifications when new logins occur etc. and you can browse the history of logins. I wouldn't say it is 100% secure, but I also wouldn't say that about data stored locally. I prefer to have my own data under MY direct control, and I think my personal machines are much less likely to be targeted by nefarious scumbags than Irish data centres.

Try gnucash. Its a bit manual compared to these online accounts programs, but better than a spreadsheet. That is what I am using now having moved off Quickbooks (awful). I was also concerned about data privacy, maybe not hackers so much as the SASS supplier themselves. Its got to be awfully tempting to mine all that lovely highly sensitive accounting data they hold!
The other advantage of running locally is that its instantaneous to respond to your inputs. No more spinny-f'ing-spinny waiting for a webapp to load.

There are really no apps that aren’t connected to the internet in some way (and hence potentially exposed) and you are generally the weakest link in any secure pipeline, but YMMV.

Yes, I've tried Gnucash, found it even more clunky than excel.
I'm really simple- sole trader, no real exes, I also do NOT use 'apps' for anything important.
PC for computer related stuff.
'phone for 'phoning/text/email.
