Can anyone suggest a piece of software I could use to record a demo of an IT system.

Something that would enable the resulting video to be saved in a Windows Media and/or Quicktime format.

Camtasia rings a bell - commercial product though.

We use Captivate. Not sure about the export formats though. Check it out.
Do you/your clientco have livemeet or webex? I know they export to wmv. With sound if you want a commentary.

Try Snagit - it has a recording module which I have used for demos/trainng purposes - not too expensive and usefull for screen capture as well.
