Gmail has the ability to "Send Mail As" someone other than the default [email protected] address. When you add a "Send Mail As" account, you have an option to "Send through Gmail (easier to set up)" or to "Send through [email protected] SMTP servers".
I'm talking about doping the latter, not the former.
I have no idea why you think, or why you think I think, that your email might be sent as [email protected]

Now, if Fred replies to the message (using his Gmail app), it appears to come from the Gmail account, but of course Fred wants it to appear to have come from his company's domain as he doesn't want to admit to using free Gmail as his corporate email solution!
So I also set up in Gmail "Send Mail As" [email protected] AND I configure it to use localcompany's SMTP server, then the reply from Fred does indeed indicate that it was sent from [email protected]

It does mean there's an extra step in forwarding, but I've never noticed a delay.

Won't one of the problems with IMAP be that if one user deletes an email then it will get deleted on the server and from everyone else's devices?
Or is this not an issue with IMAP?

Yep. PermieCo just use GMail for everything; it's fine. That's what I'd do if I was setting up a new business. POP3 mailboxes are a ridiculously outdated idea.
I still have Thunderbird on my PC to download the mail via IMAP, because I liked the idea of having a local copy in case Google throws a wobbly, but then that's probably a bit unnecessary.
