How do you account for the money you don't earn while on holiday being that you've not earned it so it's not profit?

With the weather and all, we've been thinking of having a small spring break, on top of the usual summer holiday.
Given that I would have to take a few days off this will eat into the budget somewhat - plus of couse the travel, food and accom expenses.
Still, it won't be that much.
How much do you spend on holidays, 5, 10, 20% of your profits?
