Almost as important is a contracted agreement as to what that evidence should be. Timesheets is one type of evidence.
I wouldn’t be worried about not using Timesheets, but only if you have a list of deliverables in a Statement of Work.
You could also put timesheets in a statement of work (or schedule) so you don’t have to alter the contract.

A friend is an academic (permie obviously), and one of the reasons he got his professorship is because of his commitment, as evidenced by the presence of his car in the car park at all the hours God sends. OP - The point of T&M is that you have delivered something that the client has accepted. How that is evidenced is really between you and them, as is payment frequency - on delivery, on agreed stage payments, on periodic terms, whatever I agreed. When you agree that with the client, ensure it is in the schedule to the contract.
