I picked up some beef skirt from Sainsbury’s last Friday as an experiment, as it was dirt cheap. Just diced it up and bunged it in the InstantPot™, fried with onion to brown it, then some chopped-up spuds, herbs and pepper and stuff, and a can of beer for flavour. Forty minutes on high pressure, and I had a really nice stew for my tea
