I'm making Scotch broth with the remains of the half shoulder of lamb from yesterday. I even got a barley-lentil-split pea mix and soaked it overnight, and all that kind of stuff
I'm simmering the veg with the meat and bone for a few hours before adding that, though. AIUI the grains and pulses only need about an hour or so of simmering, and that wouldn't be enough to properly draw the flavours out of the scapula
