Lamb shanks finally served - well, one of them: I couldn't manage both at one sitting - and vey, very nice it was
I think the additional effort put into obtaining exotic vegetables like leeks, and fresh herbs and so on, paid off in the rich but well-balanced flavour of the finished product.
But next time I'll probably start a few hours earlier - a couple of hours so I don't end up dishing up at midnight, and another hour or so of cooking, to get them over the line into melting-off-the-bone territory, which they'd almost but not quite achieved. I thought four-and-a-half hours would achieve it, but apparently not; though maybe it didn't help that I accidentally turned the ring off for half-an-hour or more halfway throughComment
