          This one you stick in a sauce pan and it heats a circulates the water at an ideal temperature.

          You can either use placcy bags or vac pack them, I have a vac packer.

                  Yep, we know that, bought the river cottage booze book. Gives you several ways of sterilising stuff, not to mention ensuring the water being used is up to scratch.

                    They're not that expensive, great if you buy large packs of stuff and also for freezing meat. not to mention it speeds up the process of curing, so only requires a couple of days instead of a week.
