it's my own domain, so I create email addresses that reflect organisations (e.g. tvlicensing@example.com) so I can tell if they ever get leaked to spammers.
I used to do that as well - it once allowed me to identify the perpetrator of some credit card fraud, although the credit card company didn't seem interested in pursuing it.
I stopped using such addresses after being on the receiving end of a flood of backscatter when my domain was abused by a spamming sack of tulipe, and I had to disable the catch-all address and implement an SPF record.
