I did a really nice turkey and ham pie for New Years Eve. Because it was supposed to feed a lot of people I wanted it to have a lot of filling - which basically meant it needed to have high sides.Originally posted by EternalOptimist View Postwhats for tea nick fitz ?

The problem here is that normal shoe crust pastry would collapse so I thought I could blind bake it first or make a thick hot water pastry such as one finds in hand raised pies (which are generally served cold).
I actually went for the hot water pastry with a homemade flakey pastry topping. The flakey pastry turned out well, not so convinced with the hot water pastry.
Think I'd blind bake some short crust next time before adding the filling.Comment
