    Dover sole - quick and easy to cook (fried in butter). Use creamed mash or lemon and parmesan potato gnocchi.

      Poached salmon fillets, individually wrapped in foil with lemongrass, coriander and lime leaves. Serve with fresh asparagus or pak choi and plain white rice formed into timbales. Dead easy. (obviously don't serve them in the foil).

                    (normally) salmon risotto with king prawns on the side and roasted vegetables. If you are not able to use salmon, use haddock.
