The other way, is to make the definition so vague, that anything that happens can be held up as proof.

That's a possibility.
Another possibility is that climate scientists are right and you are too thick/too poorly educated/have poor judgement/have no analytical skills/are too biased* to assess the validity of their claims.
I'm not going to waste too much time wondering which is more likely.
