There are (at least)a couple of ways forward. You can be helpful and probably have praise in the form of extensions heaped upon you or become an obstacle and expect to be removed.
Kicking her in the "fadge" <--- how quaint; is not an option unless you're a soft twat who gets off on hitting girls.

She sets a dealine for a task, you tell her it's probably not achievable, but she sticks with it regardless and from that point on emails you every 30 seconds asking "is it's done yet".
She contradicts herself in every email she sends out, can literally change her orders 3 times in the space of 10 minutes but is totally oblivious to the fact.
She's implied on more than one occasion that my work from home days are "days off" and I should think myself lucky.
She even admitted that her motto was "20% Ability, 80% Confidence".
It makes no difference that she has a fadge, I'd be complaining as much about a bloke PM if he was as bad.Comment

This doesn't sound good, is she a permie or a contractor? Assuming she's young inexperienced it doesn't sound like she's done proj mgt before? If it is a 'good' company/org., can you have a dialogue with her superiors or will it back fire? These things need to be dealt with in one way or another.Comment
