    A recipe from the top of my head that worked

    This evening at late notice we entertained.

    So I nipped to Tesco.

    The side salad

    Italian leaf salad (pre prepared in a bag)
    Added :
    8 small green chillies (cut across ways finely - to give rings)
    Salad tomatoes (cut into 8ths)
    Mushrooms (finely diced)
    Edit : Chopped coriander.
    Salt
    Pepper
    Olive oil
    Balsamic vinegar
    Lime juice from half a lime (rolled the lime under the palm of my hand on the counter first for about 60s first to release the juices)

    Sea Bream
    Cooked on the barbecue in foil parcels
    Slits cut lengthways in the flesh diagonally for inserting lime wedges
    Garlic butter in the fillet slit
    Sprinked flaked chillis over the top

    Also on the barbecue

    Sliced green peppers (quarters)
    whole vine of rippened cherry tomatoes (draped on the grill in one piece)

    Verdict around the table

    SY02 8/10 Chillis in the salad a tad too strong, try less
    Guest 1 8/10 Don't like bony fish try fillets
    Guest 2 9/10 Remove head and tail from the fish as she doesn't like to see it

    Verdict from me

    SY01 9/10 needs more chillis in the salad

    So there you go

    But, try it before criticising.

    It was seriously nice.

      Don't not remove the head of a fish. The cheek meat is very tasty. As are the eyes.

          It sounds nice, but I'm not sure you can really pass off 'salad with chillis' and 'cook a fish with bits of lime stuck in' as original recipes. Plus, raw mushrooms are foul.

          Tomatoes on the BBQ sound tasty, but otherwise the BBQ seems a bit surplus to requirements since you wrapped the fish in foil.

            Forgot to mention coriander in the salad as well.

            It was intended to be a simple, quick and tasty meal. It was off the top of me head so there.

            Barbecue did flavour the meat so it was well worth doing.

              If you wanted to flavour the fish without toasting it completely on the bbq then wrap a whole fish stuffed with herbs and lemon in newspaper and tie with butchers string, soak in water thoroughly and then place on the bbq for 30 mins.
              That way you get to steam and smoke the fish at the same time.
              If you do a whole salmon then it will take about an hour, keep turning the fish and douse in water occasionally.

                I didn't know that method was widely used, as I've always had very odd looks from people when I've done it. I really like it for trout and it works brilliantly in the oven too.
                I was taught the approach by an Aunt who saw it in Austria, it's the best way I know to cook whole fish, tender, tasty and no burned bits.

                Oh and I would go really light on the chillis in the salad, but put a bowl with them finely chopped on the table so that people can season to their taste. Food that's too hot is seriously horrible to many people.

                    As a guest I'm sure I would have enjoyed it, I like fish and lime and chilli and coriander, just saying it's not too creative... but on the other hand if it tastes good who gives a damn?
