One webserver, a many trick pony. Nextcloud, Fresh RSS, WordPress, Jelly fin etc
One Recalbox - Retro gaming and Kodi TV
One currently being fitted out as a poor mans Bloomberg.

my recallbox and kodi instance is fully tricked out. Im sure you can read between the lines with regards to Kodi I have about 250 retro games, Streetfighter and Outrun are still favourites even after all these years!

The bloomberg replacement runs debian and im only part way through the build sheet on this one so more news to come, I know its going to need Grafana.

A lot of my installs are add on heavy, a great example is nextcloud more addons than you can shake a stick at As per another thread this is having quite a bit of work done on it today.

I've got 4 of them and none is a recent model.

I mostly use them with Mosquito, MySql and NodeRed for collecting, storing and displaying data from remote locations. They're pretty good, and can be left running for months without trouble as long as one can avoid excessive SD card writes. Too many writes kills even good quality cards, so an external HDD is needed for databases (or a remotely hosted filesystem).

Also ran Home Assistant, although I gave up with that in the end. They're great for trying things out and then just popping a fresh SD card in for the next project.

Also used to make network bridge to connect spare router WAN port to mobile phone hotspot for backup Internet and in conjunction with RF modem modules for setting up wireless data links.

I don't run any with local displays - all are accessed remotely with command line or VNC.

I think I agree with you on Home Assistant, its a bit bloated and a time killer!
