The staff cannot work two or more metres apart on a consistent basis. Their 'kitchens' aren't designed to accommodate that. They also have to touch shared items and even if they're wearing gloves they're likely to handle things, including cash and payment devices, that then just spread whatever one customer hands over to them to the cooking devices and so the trend of spread continues.

Also: it's easy to differentiate a niche professional contractor from a run of the mill one: Intelligent people care about they eat and don't touch McDonalds' tripe with a bargepole, ever.
