There is no snow in the European resorts at the moment, unless you go further east. That said, steer clear of Pamparovo in Bulgaria as it was awful when we went two years ago now.

Plenty of snow in parts of Europe, very little in France.
We don't ski but when we stay in Lapland it is in the neighbourhood of Yllas which is a very popular (maybe the most) amongst Finns. They're big into cross-country skiing too and the resort has a bunch of slopes although my understanding is they're still using old-fashioned ski-lifts.
