Can someone point to a good template? I have looked at legislate.tech - has anyone used a tool like that before? I don't want to draft a huge document myself so keen to find some out of the box solutions

As eek says. Just rip off an old one you've had before. It doesn't need to be complex, unless you want to be an arse.
In fact why even bother? I've had jobs, with PAYE payslips, without an employment contract. As long as I got paid I don't care. Never has a contract (employment) made any difference to me.See You Next TuesdayComment

Hit google or linkedIn and search for a HR support company - they will have the contracts and should fix a whole set of other issues that you are probably not aware of.

A contract is only any help when you fall out. And even thin it's not really much help as all it does it state employment law.
Restrictive covenants are about the only extra value an employer might want but they are often unenforceable.
Worry more if the person is likely to be employed beyond 2 years. That's when you want a contract as that's when they start to get actual rights.
