Yes you can do that as you will have a probation period for most likely 6 months, when the notice period is usually 1 -4 weeks so that's acceptable for most contracts. Have done it before. Thing is you need to find a suitable contract within the 6 months, else your notice period will go up to perhaps 3 months which is too long a wait for any contracts. Absolutely nothing illegal about that. The probation period is not only there for the employer but also for you to say it's not what I expected I'm leaving.

Good old Dutch professionalism. I'll bet you get invited back to previous employers a lot.
