If yes, Is there any specific format, Does stamp required to do?

Doesn't specifically exclude any occupation, just gives examples of acceptable professions.

Did pub landlord and bookie used to be on that list, or was that on the passport application form?

IIRC Director of a VAT registered company was on the list as well. The rationale is that you can be disqualified.

I think that's only for counter-signing Passport photos.
