If they skin is under tension, everything would need to be homogeneous for there not to be a bit of a bend. Also, if the little knot at the end were not placed exactly in the middle of the sausage, that would tend to pull it out of shape IMO. Perhaps a little less tension in the skin would help too.
I tried to calculate how much longer the skin would be on one side of a bent sausage, but it's surprisingly difficult to do because the ends will deform in a tricky way. But order of magnitude wise and assuming a spherical sausage (in terms of it's radius of curvature), with a radius of curvature 1m, length 10 cm, width 1cm (round numbers) the sausage would be about 1mm longer on one side, or be under more tension on one side. For an even bendier sausage, radius of curvature 10cm, it would be 1cm longer on one side. The latter case suggests something seriously wrong with the sausage machine as the sausage is bent in a circle of arc angle of 1 radian.

You don't boil them though, they burst. It's just warm / hot water to warm them up.

The pressure inside will push the weakest side of the gut more in the same way long ballons have a turn, also the linking (the bunches of 3 you see them in) will do that as well.
The Vietnamese keep their crap for a year until it has broken down then spread it on their fields.
