If you instead choose to follow people you'd find interesting to talk to in everyday life (whether or not they're famous) then you'll pick up on interesting stuff. Most of the people I follow are people I know or have worked with, so the only stuff I see comes from them except for the odd occasions when they retweet something by somebody else - if it's worthwhile and a look at that person's other tweets suggests they're usually posting more signal than noise, I'll probably start to follow them too, which is the social bit of it.
Apart from tech feeds like MS's IE Team or the iPlayer Team at the Beeb, the only people (or entities) I follow who could be described as well-known are @bengoldacre, @timberners_lee, @Big_Ben_Clock, @VizTopTips, and @AlQaeda (just in case).
