It's all sugar. The only thing that can spoil it is mould & putting stuff in a fridge doesn't protect against mould. The spores get in there potentially every time you open the jar & most moulds can proliferate at the temperatures found in a fridge.
Plus if the jam has loads of fruit in it the fruit bits taste nicer cold when you dig them out with a teaspoon.

As mentioned, people used to have colder houses. They also used to have pantries/larders which are a great way to keep semi-perishable foods fresh.
