    The guy across the road living in the wrecked house is out in the front garden doing some maintenance.


    Gosh.

    Must have exhausted himself.

    He's leaning on a spade (the shovel kind) now.

      We've never had guinea fowl before and not too sure how to cook it and whether that would fit in with the "healthy" eating plan we have.

          We just roasted it like a chicken. I think it's pretty healthy as there seemed to be very little fat.

                  If that's what it's for, then surely it would be useful to show the rep a post has received, either positive or negative. At the moment people are repping users, not posts, and it's not helped by the fact that you don't seem to be able to rep two posts from the same user.

                    Guinea fowl, best to braise it as it can dry out rather quickly. PM me if you want recipes.

                    Or you can joint it (get your butcher to do that) and then pan roast the legs and breasts for about 20 mins at 180, you can then use the pan juices to make a nice white wine sauce whilst the bird is resting. 100ml white wine, deglaze the pan and reduce slightly, add 10oml of chicken stock or water and then about 20ml of cream or creme fraiche, you can also add some tarragon or thyme.

                    serve with some green beans or sprouting broccoli

                      Just stuck a bit of foil over ours and it turned out ok.

                      Tis a lovely flavour - sort of a cross between chicken and pheasant. We made a lovely stew out of the remains a couple of days later too (a decent glug of red wine in the stock helped )
                      Seriously considering it as a Christmas dinner option (with bacon and chestnut stuffing)
