                Salt to taste.

                Put cream in a mixing bowl and whisk hard for 5-6 minutes until it goes passed whipped and starts releasing liquid ( you'll know when it happens!)

                Pour off the liquid, it's butter milk, and keep it for cooking etc. makes really good milk shakes as welland even tastes good if you drink it just as it is.

                Using a wooden spatula work the butter to release all the butter milk and drain it off.

                Add a couple of tablespoons of fresh water to the butter and work it again to rinse it. Drain again and this time discard the liquid. Repeat once more.

                Add salt to taste and work the butter again to mix it evenly.

                Done.

                    All went swimmingly - everything configured and testing completed by lunchtime. Then spent three hours tracking down an obscure (but obvious once you've found it) IIS setting that stopped people connecting remotely.

                    50/50 whether to have day off tomorrow (hubby could do with some TLC) or come into clientCo - I've got a few days to make up before end of Feb.
