Sliced mushrooms, thyme, garlic, butter , cream.

Saute mushrooms in butter, add garlic, after 5 mins add the cream thicken with cornflour, season and add the thyme last.

Parma ham and parmesan or gruyere and ham

Did a variation on that but made a cheese sauce with a touch of mustard and added the saute'd mushrooms (no garlic) and some nice chopped ham to that. Layered up the pancakes with the cheesy mushroom and ham sauce. Nom

Used to do pancakes with chilli con carne in them and top them with cheese, sour cream and guac, bit of a French stylee bourrito
