Well the 'correct' way varies between countries - in the USA fork is in the right hand, and you swap hands when using the knife to cut.

I don't think it's "correct" in the USA, it's just what most of them do.

Yes but most etiquette is purely for its own sake rather than for logical reasons. For instance if you're eating food that requires little cutting, it makes more sense to hold you fork in the right hand the 'wrong' way up, rather than trying to push food onto the back of your fork with a knife.
