1. Components needed:
* 2 litres of Tesco's grape juice (white or red)
Must be unsweetened, as sweeteners are artificial so yeast can't "eat" them
to turn them to alcohol, so they will stay and make final product too sweet!
* 2 lb bag of Sugar
* yeast (bread making yeast is fine, but brewer's yeast is a bit better)
* 2 litre glass coke bottle (or carbonated water glass bottle etc)
* Sodium metabisulphide (i.e. water sterilizing tablets used by campers)
* pack of child's balloons and rubber bands
* pin
2. Steps :
2.1 Empty & clean coke bottle (pour muck down the drain! ;-)
2.2 Fill with 1 litre of grape juice & all the sugar, shake until sugar dissolves,
then put lid on _loose_ (to keep flies out, but let air in as first fermentation
stage is aerobic, i.e. needs oxygen)
Contents will foam for a while, then settle down to bubbling after a day or so
2.3 After foaming, stretch balloon over top, secure with rubber band,
and poke single hole in it with pin
This hole acts as a one-way valve, preventing oxygen getting into the bottle
(which is necessary as second stage of fermentation is anaerobic) but at
the same time allowing excess gas produced to escape, which will make
balloon bulge out.
2.4 When balloon bulge subsides, this indicates that fermentation is complete
2.5 At this stage one can add a pinch of potassium sorbate, to stop any
residual fermentation (which otherwise would increase pressure inside
the bottle once the bottle has been sealed)
2.6 Screw top tight onto bottle, to seal it.
2.7 Drink wine
