I am really keen on starting some kind of plan B, but have not been able to as of yet.....

I am thinking of something along the lines of a consultancy. Since this post is for those with plan B businesses, could any of you give me any advice on how to go about getting clients and really getting started?

find a problem at an existing client. Create a solution. Sell it back to that client.
