    Day 1 is prepping the tails, rendering the fat and cooking for 4 hours at a low temp, day two after its cooled taking the fat off the top ( easier if it has been in the fridge overnight), the taking the meat off the bone and finishing the stew off and then slow cooking for at least another 2 hours. You can eat it on day two if you like.

    I like to serve it with a good buttery mash ( and a nice bottle of claret!)
