I can get back from Murica Airport in Spain to the UK very quickly, and very cheaply, (not that far price and time wise as from Leeds to London on the train) however getting from my place to Murcia is a PITA and not quick, IIRC there are three airports in Brittany, Lorient & Dinards (no direct flights to London) and Brest (direct to Luton only).

The most convenient usable airport will be Rennes, not sure how close that is to the idyllically lifestyle you seek is though, and with the GBP/EUR exchange rate Europe is expensive these days (we bought in 2002 when we were getting €1.6/£1).

Its doable, but not for the faint hearted

Yes, the poor guys like bobs that you are always complaining about, who will stay working on the weekends.
Besides the bad planning, this reveals the kind of person you are.

Seriously though. If you want to dodge tax stay in London. Tax dodge central of the galaxy.

The German authorities seem to know when I've spent money on a mars bar when I'm in the highlands.

I used to commute weekly from my base in Madrid to Brussels for about 3 months, after a while I was exhausted and always had a cold.

Same in DK, everything is attached to your Digital Post/CPR and NemID, bank, tax, address, the lot. You even have to register betting companies your etc via it, big brother or what? Thankfully I don't bet, was looking to get free live UK football but not at the expense of the Danish Government watching me place bets (if I did)!

There is a difference between the words "most" and "all".

And you clearly haven't been though UK airport security.

Btw it's British staff I think are crap.

If you are working in UK you must pay UK tax, tax is due where the work is done.

Otherwise you are guilty of tax evasion.
