In the prequels, you see the Jedi just past their peak - when it comes to it, the fight between Yoda and the Emperor ends with Yoda having to run away because he concedes that the fighting style that the Jedi are used to is no match for the Sith.

In the originals, the only people who know anything about how to fight are an old man and a half-machine (OK, more machine than human) - and neither have needed to fight for a while. That leaves Luke to develop his own style, which is better than his father's, but wouldn't be a match for someone from the prequels who was trained in the different fighting styles.

So, if there is no-one left to teach how to do it, then brute force to win would make sense.

(There may be someone who can teach it, I've not read any of the books that deal with anything happening after the fall of the Emperor and Vader)
Does this mean in the 'Galaxy far far away' they don't have the equivalent of You tube with videos on how to fight like a Jedi??

Probably not - it was a long time ago after all.

Basics like camp cyborgs, wookies and ewoks? The original films were every bit as full of cringeworthy novelty characters. I hadn't really realised this since I watched the originals as a kid and the new ones as an adult, but rewatching IV - VI recently I was struck how JarJar is a direct successor to C3PO.

C3PO was bearable though. It was when they brought in the Ewoks in Return of the Jedi, purely for the kids and to sell toys, that things started going downhill.

A lightsaber is a sword. We haven't forgotten how they work, why would they?

They have to build the lightsabers too though, and that becomes a bit of a lost art.

At the basic, pointy end towards the bad guy, swing it and try and chop bits off while they do the same level, no nothing has been lost. What has been lost is are the skills and training that would let a Jedi turn anyone else not trained to the same level into a pile of diced pork on the floor without breaking sweat. The equivalent of putting you or I into a boxing ring with a professional boxer. You know how to punch someone, but you'd still get mashed by a pro.

There's got to be a USB Stick somewhere out there in the Galaxy with a file 'How To Build a light sabre.doc'. I am sure it's in Yoda's shack on Dagobah

If you trained to fight with a light sabre like that you would instinctively not cut yourself with the cross guard I suppose but for the amount of protection it offers against another light sabre you might be better off not bothering and using one of the normal ones. I don't use two handed swords with big cross guards unless I am wearing a helmet. I have a habit of hitting myself in the side of the head with the bloody things.

I have trained someone to fight with a light sabre once, it is quite fun and a bit different to a real sword.
